Rakugan is made of wasanbon (fine Japanese sugarcane sugar) and kanbaiko (fine toasted rice flour) pressed into different shapes by using a kashigata mould and then dried. This light, sweet candy-like dessert melts in your mouth and is perfectly paired with a delicious cup of matcha!
